Flat green pods from the pea family. The thin crisp pod is almost translucent and bright green. The tiny seeds inside are tender and sweet.
Look for pods that are crisp and brightly colored with small seeds.
Refrigerate, unwashed, in an aerated plastic bag up to 3 days.
Wash, cut off the stems, and pull off any attached strings. The color of snow peas can be enhanced by blanching them for 30 seconds in boiling water, then plunging in ice water.
