Variation on something I found in a cookbook
Make and share this Sausage and Spinach Saute recipe from Food.com.
- 1 teaspoon olive oil
- 1 lb turkey sausage, cut into 1-inch slices
- 2 garlic cloves, minced
- 20 ounces fresh spinach
- 1 lemon
- 1⁄4 cup low sodium chicken broth
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- Heat a pan over medium heat. Add oil, sausage and garlic. Zest the lemon and set aside. Juice the lemon and set aside. Add spinach, lemon juice and zest and chicken stock. Cover and cook until the spinach is cooked down, about 5 minutes. Halfway through cooking toss the spinach. Season with salt and pepper and serve.
