  1. In a large bowl combine boiling water, couscous and salt, stir and let stand 5 minutes, fluff with fork steam the bell pepper, carrots, and green beans for 1 minute& mix with couscous Mix remaining ingredients together& pour over couscous.

I'm glad to see this posted...I was about to post it myself! This is the same as a Moosewood recipe, except that this contains less oil and no onions. I really enjoy this salad; the marinade is light and flavorful, and the salad is a lovely combination of colors. Don't leave out the nuts and currants; they really make the dish. Definitely give this a try!
