- 8 ounces medium pasta shells
- 1 lb ground turkey
- 1 teaspoon salt, divided
- 1 onion, chopped
- 2 red bell peppers, cored, seeds removed, cut into 1-inch pieces
- 1 green bell pepper, cored, seeds removed, cut into 1-inch pieces
- 2 garlic cloves, minced
- 1⁄2 teaspoon fennel seed
- 1⁄8 teaspoon pepper
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1⁄4 cup chopped flat leaf parsley
directions
- Cook pasta according to package directions.
- Meanwhile, in 10" nonstick skillet, cook turkey with 1/2 teaspoon of the salt over medium heat, breaking up pieces of turkey, 4 to 5 minutes. Remove from pan. Cook onion, peppers, garlic, fennel seeds, remaining salt, and pepper in oil over medium heat until golden, 5 minutes. Add chicken broth; bring to a boil and cook, covered, 10 minutes, until tender. Stir in pasta and turkey; cook until heated through, about 1 minute. Top with parsley.
