Orange Pork Chops

- 4 boneless pork chops
- 2 teaspoons canola oil
- 1⁄2 cup packed brown sugar
- 1⁄3 cup apple cider vinegar
- 1 tablespoon reduced sodium soy sauce
- 1 teaspoon molasses
- 1 teaspoon grated orange rind
- 2 teaspoons cornstarch
- 1 tablespoon water
- 1 large navel orange, peeled and sectioned
- 3 cups cooked rice
directions
- Heat canola oil in large skillet.
- Brown pork chops on both sides.
- Remove pork chops from pan; keep warm.
- In same pan, combine the brown sugar, vinegar, soy sauce, molasses and orange peel; stir until well blended.
- Return pork chops to pan; cover and simmer for 15 minutes.
- Remove pork chops from pan; keep warm.
- Combine cornstarch and water until smooth; stir into pan juices.
- Bring to a boil and cook for 2 minutes, until thick, stirring constantly.
- Add orange sections, and continue stirring another minute until orange heated through.
- Serve sauce and pork chops over hot rice.

Just a quick note from the original poster. I tried this recipe last week but left out the orange because I didn't have any on hand...to my surprise I liked it even better! So if you're not an orange fan, try it without. Of course, then they wouldn't exactly be "Orange" Pork Chops, but...well...who cares! They're still delicious!

I give it a high rating, because of it's crucial elements; quickness, flavourful and compliments many other flavours and no-one has ever disliked it of those I have served it to. It's also, affordable and one can almost always find the necessary ingredients right at home. SOmetimes I like to cook in some red onions or add chives to the orange slice part.
