- 1 2⁄3 cups milk
- 1 1⁄4 ounces cornstarch
- 1 1⁄4 ounces sugar
- 3 1⁄2 ounces nut butter
directions
- Dissolve cornstarch and sugar in 1/4 cup of the milk.
- Bring remaining milk to a boil.
- Slowly pour dissolved starch and sugar into boiling milk, stirring constantly with a whisk, until the whole mixture is incorporated.
- Cook until mixture thickens, stirring constantly, then remove from heat and let cool a little, still stirring.
- Fold in the nut butter, mix well and divide pudding into 3 small bowls.
- Let cool, then refridgerate.
- Serve with whipped topping, fruit sauce, pears in red wine or roasted plums.
