New Jersey Zucchini Bake

- 2 cups zucchini, shredded, drained
- 1⁄2 cup mayonnaise
- 1⁄4 cup parmesan cheese, grated
- 2 garlic cloves, diced (optional)
- 1 onion, diced (optional)
- salt
- pepper
- 1 loaf Italian bread, day old
directions
- Mix all ingredients except for the bread and refrigerate until chilled and you are ready to bake it.
- Preheat oven to 350 degrees F.
- Slice the bread and place in an 8 X 8 inch baking dish.
- Put the chilled zucchini mixture over the bread and bake uncovered for 20 minutes.

Very interesting recipe and a good way to use up extra zucchini. I lightly toasted the slices of Italian bread because I didn't want the end result to be too soggy (and it wasn't). I baked this for about 30 minutes to make sure the zucchini mixture was cooked through. This was a nice side dish for an Italian meal.

After all these years I'm trying to get all my index cards and clippings, that still sound interesting to me, posted here so that I can find them and eventually make them! <br /> <br />I've posted some of my Mom's recipes. I regret not having paid more attention to my Grandmothers' cooking. They made some dishes that I miss and there were/are no recipes for them. <br /> <br />I have a wonderful DH and 2 wonderful sons. They are thrilled that I found this site since they directly benefit from it! Before finding 'Zaar, I was less of a cook and more of a recipe collector but now I try many more things and we're having more fun in the kitchen (at least I am)! <br /> <br />Thanks for all your ratings, comments and help in the forums AND for posting so many great recipes. You've enhanced my cooking skills and expanded my horizons!
