Heavenly Zucchini Bake

"This was sent in to our local KTCS TV station for one of their cookbooks called "Favorite Recipes". It was submitted by a viewer from Bellevue, Washington. She would order this from a restaurant called 13 Coins as a late night snack. You can also serve this as a side dish with any entree."

ingredients

  • 4 zucchini, medium to medium-large
  • 12 pint whipping cream (unwhipped!)
  • 1 - 1 12 cup parmesan cheese, grated fresh (not the stuff in the green tube!)

directions

  • Slice the zucchini into long wedges, roughly the size of 'steak fry' potatoes.
  • Place in one layer in a rectangular oven baking dish.
  • Pour container of unwhipped cream over.
  • Cover with the grated fresh Parmesan cheese.
  • Bake at 325° for 45 minutes.
  • Broil for 2 minutes or so to get the top bubbly and golden brown.
  • Serve!

  1. I have been looking for new ways to eat zucchini. We loved this. I used one large zucchini, light cream and a cup of parm cheese. I also added 1/4 teaspoon of pepper. This was even good heated up the next day.

  4. YUM!! this is delicious, I added some garlic powder and cayenne pepper to the whipped cream, then sprinkled sliced onion over when layering, we really enjoyed this, thanks for sharing Teresa!
     
  5. This was good! I am the only one who eats zucchini so I cut the recipe down to 1 serving. Use one large zucchini, 1/4 cup cream and 1/3 cup parmesan cheese. I think it needed a little less cream, it was a little soupy. However was very tastey. Made for 1-2-3-Hits March 2010.

I enjoy hiking, snowshoeing, have done some rock climbing but age is creeping up on my poor old bones. Anything to do with the outdoors I enjoy, so why do I live in rainy Washington state? We have 2 wonderful children, both grown. My son lives in LA and my daughter and her husband recently moved back in the area with their little boy...our grandson... who just turned?5 years old. We have a granddaughter who lives close by...she just turned 23 this year. She's a sweetheart.?
