Great easy to make recipe! I made these for a baby shower this past weekend and they were yummy! My wafers were also somewhat smaller than the pan, so I crushed them and mixed with a bit of melted butter and pressed them into the bottom. I fanned out half a strawberry (they were really big) over the top which made them look a bit nicer. Thanks for posting!

I use Neufchâtel cream cheese (30% less fat). I cut the sugar content by using 1/4 cup granulated sugar and 1/4 cup Winco Foods powdered sweetener (made with stevia and is measured 1:1). There’s new Nilla Wafers now called Lemon Nilla. I also added a tsp. fresh lemon zest and, before filling the cupcake papers, spritz inside each one lightly with baking spray. For the topping, I add a tsp. of light cherry pie filling. My version comes out to only 124 calories for one.
