  • Line muffins with foil liners. Place one vanilla wafer in liner.
  • Mix cream cheese, vanilla and sugar on medium speed until well blended. Add eggs. Mix well.
  • Pour over wafers, filling 3/4 full.
  • Bake at 325 for 25 minutes. Remove from pan when cool. Chill.
  • Top with fruit and nuts.

  2. Delicious!! I used cherry pie filling to top off my individual cheesecakes - wonderful!! I also made them in coloured muffin cups - really added to the asthetics of it. Next time I'm going to try some blueberry topping - excellent recipe - very good and very easy. Thanks for posting!

  4. I'll definitely be making this again. Couldn't be easier and more delicious. Just don't do like I did and buy the store brand vanilla wafers. They were very small.
     
  5. Great easy to make recipe! I made these for a baby shower this past weekend and they were yummy! My wafers were also somewhat smaller than the pan, so I crushed them and mixed with a bit of melted butter and pressed them into the bottom. I fanned out half a strawberry (they were really big) over the top which made them look a bit nicer. Thanks for posting!

Tweaks

  1. I use Neufchâtel cream cheese (30% less fat). I cut the sugar content by using 1/4 cup granulated sugar and 1/4 cup Winco Foods powdered sweetener (made with stevia and is measured 1:1). There’s new Nilla Wafers now called Lemon Nilla. I also added a tsp. fresh lemon zest and, before filling the cupcake papers, spritz inside each one lightly with baking spray. For the topping, I add a tsp. of light cherry pie filling. My version comes out to only 124 calories for one.
