Microwave Risotto Chicken

"This is one of my favorite low-cal recipes to make on a weeknight. Probably not a true risotto but it is yummy."

  • In a 2-quart microwave-safe casserole, combine onion and oil, microwave for 2 minutes.
  • Add rice and microwave for 1 minute.
  • Add broth microwave for 6 minutes.
  • Stir in chopped celery, ground chicken, and spices. Microwave for 8 minutes or until chicken is no longer pink.
  • Remove casserole from microwave and let stand covered for 10 minutes until liquid is absorbed. Test to make sure rice is cooked.
