Marmie's Wild Rice Pilaf With Mushrooms

ingredients
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 red pepper, small and diced
- 1 green pepper, med and diced
- 1⁄2 cup red onion, diced
- 4 garlic cloves, coarsley crushed
- 1 1⁄2 cups mushrooms, crimini, sliced
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon garam masala
- 1⁄2 cup brown rice
- 3⁄4 cup wild rice
- 3⁄4 cup wild rice, Lundberg Country (a mixed variety)
- 1 liter vegetable broth
- 2 1⁄4 cups water
- 2 tablespoons beef bouillon (Liquid OXO)
- 1 teaspoon kosher salt
directions
- Gently fry red and green peppers and red onion with garlic in butter untill almost cooked - 3-4 minute.
- Add Mushrooms cook until somewhat soft -- about 4 min depending on your heat setting.
- Add herbs and seasonings -- cook 1 more minute.
- Remove vegs from fry pan and set aside.
- Place rices in pan on med high heat (add olive oil if necessary) and "brown" lightly -- about 3 minute
- Add liquid and bring to boil.
- Place in baking dish (corell?) with tight lid.
- Bake at 350 degrees F for 45 minute.
- Check and remove from oven if cooked or leave to cook another 10 min if still watery. (can remove lid at own discression).
- When almost cooked completely, remove from oven and let sit 10 - 15 minute.
- Fluff with fork and serve.

I live on a farm in beautiful Alberta Canada with my husband and children. Between us we have six 'kids' ranging in age from 16 - 26 years old. Now that there are only two of our kids left living at home, I have more time to play around with my real passion; cooking and trying new recipes. I really love it when the kids come home so I can cook for them. I truly enjoy harvesting our massive garden (well, actually it is more my husband Jerry's garden if I am honest.)and putting up preserves every year. We have a great arrangement, he plants and weeds - I cook and can everything edible! It works well for us. My favorite thing is when my husband and I share a glass of wine while I am cooking and have the best visits. Oh so much good food out there and so little waistline to spare!
My idea of a nice vacation souvenir is a pile of new and unusual spices to play with! If I don't know what it is.... I just search for it on Recipezaar!!! Way too much fun!
