Maple Syrup Banana Bread

Dry mix
- 354.88 ml flour
- 59.14 ml sugar
- 118.29 ml chopped nuts
- 9.85 ml baking powder
- 4.92 ml salt
- 1.23 ml baking soda

Moist mix
- 236.59 ml pureed banana
- 2 eggs
- 78.78 ml maple syrup
- 78.78 ml canola oil
directions
- Heat the oven (350F).
- Mix all dry ingredients.
- In another bowl, mix all moist ingredients.
- Blend the two mix until you don't see any more dry ingredients (don't overblend it or the bread will come hard!).
- Put into a greased bread pan, and then into the oven for 50-60 minutes.
- Let cool 15 minutes before removing the bread from its mold. Enjoy!

love this recipe. saw the one star review harping on saltiness after I'd cut the salt to a few twirls of pink salt and used a low salt baking powder. leavens fine. I use butternut squash seed oil and add a bit of powdered vanilla bean. slivered almonds amp the yum factor. this will stay in my repertoire for sure. anything sweetened with maple syrup is a winner for me.
