Low-Fat Banana Oatmeal Chocolate Chip Muffins

I am now actually "watching" my diet, and in the process am trying to make my favorites in a "low fat" manner. I took my favorite muffin recipes and combined them, made some adjustments and came up with this great recipe. Hope you enjoy them!

  1. Add sugar to mashed bananas and mix.
  2. Add beaten egg and mix.
  3. In a separate bowl mix all dry ingredients.
  4. Add dry ingredients to the banana mixture and mix well.
  5. Mix in applesauce.
  6. Add chocolate chips and Stir.
  7. Spoon into medium size muffin tin (I use paper muffin cups so they won't stick) and fill 3/4's full.
  8. Bake for 20-25 minutes at 350.
  9. Enjoy!

Loved this recipe! After reading the other reviews, I added a bit of pure vanilla, a dash of cinnamon and I used splenda in place of sugar (reduced to 1/4 cup), increased the apple sauce to 1/2 cup, used all whole wheat flour and I sprayed the muffin liners with cooking spray before filling them. Will make this recipe again and again! Wonderful way to use up those bananas in my freezer!!

Great recipe! I used whole wheat flour; Splenda (1/4 cup was sweet enough); 1/2 cup applesauce (unsweetened); added in about a tsp. each of vanilla and cinnamon; substituted walnuts for the chocolate chips. (Believe me, I would love the chocolate "kick" - we just cannot have the sugar). The result was tasty and tender, a really yummy little muffin that is a treat and easy on the diet. Thanks for this one!

YUM YUM YUM! I substituted Splenda for the sugar to save 35 calories per muffin, and they taste great. Good way to use up over-ripe bananas and get your chocolate fix all at once!
