- 3 lbs boneless pork loin roast
- 4 cups water
- 2 tablespoons soy sauce
- 2 slices ginger
- 4 star anise
- 1⁄4 cup miso
- 1⁄4 cup sriracha sauce
- 3 tablespoons sake
- 1 1⁄2 tablespoons rice vinegar
- 1 1⁄2 teaspoons sugar
- 6 tablespoons sesame oil
- 8 garlic cloves (minced)
- 2 tablespoons gingerroot (grated)
- 2 large onions (julienned)
- 2 cups red bell peppers (julienned)
directions
- Place roast in a dutch oven.
- Add the water, soy sauce, ginger and anise.
- Bring to a boil. Reduce. Simmer 1 hour, turning frequently.
- Remove from heat. Let pork cool in liquid.
- Drain. Chunk. Set aside.
- Combine the miso, sriracha, sake, rice vinegar and sugar. Set aside.
- Heat oil in a wok.
- Add garlic and ginger. Stir-fry 30 seconds.
- Add pork and onions. Stir-fry 1 minute.
- Add peppers. Stir-fry 1 minute.
- Add sauce. Stir-fry 1 minute.
