  • Put first 3 ingredients in a microwave safe bowl, and microwave until butter is melted.
  • Whisk together until well combined.
  • Add remaining ingredients and whisk until smooth.
  • Pour into a foil-lined 8x8 pan, and refrigerate until set.
  • Cut into 64 one-inch pieces.

  1. Good flavour but the granular swerve left it with a bit of a grainy crunch so I'm going to make it again using the powdered swerve and see how that goes. I had a bit of a butter slick come to the top edges of mine, it was nearly as pretty as the pics, not sure why, but other than the surface being odd inside it was lovely and creamy, it set up really well in the fridge overnight.
     
  2. This has a very good flavor of all the low carb fridges I have made. However I gave it a 3/5 because with the granular Swerve sweetener I used the fudge turned out crunchy textured. I believe it would've had a better result with the powdered version of Swerve.
     
  3. This fudge is OK. More like peanut butter cheesecake than fudge. I had a difficult time getting the cream cheese to stir into the mixture. It was very clumpy, so I ended up putting the mixture in the food processor. I think it might work better to blend the peanut butter and (softened) cream cheese together first before melting with the butter.
     
  4. Thank you for the excellent recipe!! I left out the vanilla (I don't care for the raw alcohol) then blended it all in a food processor until it was smooth as silk! Delicious!!
     
  5. After I added all the dry ingredients, oil separated from rest of the mixture! It's in the refrigerator now but I imagine it will just cool with a layer of oil on top? Any ideas what went wrong?
