This is my mother's recipe for Cajun chicken.


  1. Sauté chicken in bacon grease until golden brown and remove from skillet.
  2. Make a roux by blending flour into bacon drippings and stirring constantly until dark brown.
  3. Add green pepper,onion,and scallions to skillet.
  4. Season with salt, pepper and Worcestershire sauce.
  5. Add water, Tabasco sauce, cayenne pepper and thyme.
  6. Put chicken back into skillet.
  7. Cover and simmer until chicken is tender, about 20 minutes.
  8. Lightly sprinkle filé powder on top.
  9. Serve with saffron rice.
