- 2 cups self-rising flour
- 1 cup sugar
- 2 teaspoons orange zest
- 1 1⁄2 teaspoons ground nutmeg
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon ginger
- 1⁄3 cup vegetable oil
- 1⁄2 cup orange juice
- 1⁄3 cup buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon orange extract
- 2 eggs, beaten
- 1 1⁄2 cups fresh cranberries
- 1 1⁄2 cups ground walnuts

- 1⁄2 cup flour
- 1⁄2 cup brown sugar
- 1⁄4 cup butter
- 1⁄2 cup oatmeal
directions
- Preheat oven to 350.
- Spray or grease 12 cup and 6 cup muffin tins.
- Mix together flour, sugar, orange zest, nutmeg, cinnamon, nuts and ginger in large bowl.
- In another large bowl mix oil,juice, buttermilk, vanilla, orange extract and eggs.
- Mix together the dry ingredients to the wet in three batches. Mix only until the dry ingredients are incorporated.
- Bake for 15 minutes or until brown.
