- 680.38 g red potatoes, peeled, cubed and cooked
- 59.14 ml good quality black olives, sliced
- 4 slice bacon, cooked and crumbled
- 236.59 ml mushroom, sliced
- 1-2 garlic clove, minced
- 118.29 ml red onion, chopped
- 78.78 ml extra virgin olive oil
- 29.58 ml lemon juice
- 29.58 ml red wine vinegar
- 14.79 ml Dijon mustard
- 2.46 ml dried leaf thyme
- 2.46 ml dried oregano leaves
directions
- Combine all the dressing ingredients together.
- Toss with potatoes, bacon, mushrooms, onion and garlic.
- Cover and chill for at least 2 hours, will taste even better overnight.
