- 1 medium eggplant, cut into 1/2 inch cubes (5 - 6 cups)
- 453.59 g red potatoes, cut into 1 inch pieces (3 cups)
- 411.06 g can diced tomatoes
- 425.24 g can chickpeas (rinsed and drained)
- 14.79 ml grated ginger
- 7.39 ml mustard seeds
- 7.39 ml ground coriander
- 4.92 ml curry powder
- 1.23 ml pepper
- 946.36 ml vegetable broth or 946.36 ml chicken broth
- 29.58 ml fresh cilantro stems
directions
- Combine eggplant, potatoes, tomatoes, and chickpeas in the crock pot first, then sprinkle with spices.
- Pour broth over everything.
- Cook on low for 8- 10 hours (or high for 4- 5 hours).
- Garnish with cilantro.
