Heavenly Potatoes and Ham

ingredients
- 2 1⁄2 lbs red potatoes, quartered
- 1 (8 ounce) container sour cream
- 1⁄4 cup butter
- 10 ounces cream of chicken soup
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped green onions
- 1 cup chopped cooked ham
- salt and pepper
- 3⁄4 cup parmesan seasoned bread crumbs
- 2 tablespoons melted butter
directions
- Preheat oven to 350 degrees.
- Lightly grease a 13x9 baking dish.
- Place potatoes in pot of water and bring to boil.
- Boil until slightly tender about 12 minutes.
- Drain and transfer to large bowl.
- Mix sour cream butter soup cheddar cheese green onions ham salt and pepper with potatoes.
- Spread mixture in prepared dish.
- Sprinkle bread crumbs over and drizzle with melted butter.
- Bake for 30 minutes.

I was looking for a quick recipe to use up some leftover ham, and decided to try this. It was a delicious, easy to prepare, recipe! The only change I made was to use the whole can of cream of chicken soup and just regular potatoes, since I didn't have any red ones on hand. The extra soup gave the dish a little more of the delicious sauce! I'll certainly be making shis again! Thanks for sharing!

Very good recipe!I did make a couple changes.I used seet onion instead of the green onions,didn't have any green.I used the whole can of soup,didn't have a use for a 1/2 can of leftover soup. I didn't have the parmesan seasoned bread crumbs so I used more cheddar cheese for the toping. This is a dish I will make again. Thanks for sharing:0)

This is a great one-dish meal! In the morning, after boiling the potatoes, I assembled the dish and put it in the refrigerator. At supper time, I just popped it in the oven. Since the dish was well-chilled from the refrigerator, it took about 60 to thoroughly heat up. Great meal, Fluffy. Thank you so much. :-)
