ingredients
- 2 cups sliced, peeled, and cooked potatoes
- 1 cup fully cooked, diced ham
- 1 teaspoon minced onion
- 1⁄3 cup butter or 1/3 cup margarine
- 3 teaspoons all-purpose flour
- 1 1⁄2 cups milk
- 1 cup shredded cheddar cheese
- 3⁄4 teaspoon salt
- 1 dash white pepper
directions
- Combine potatoes, ham and onion in a greased 1 qt casserole dish and set aside.
- Melt butter in a med saucepan over med heat.
- Stir in flour until smooth.
- Gradually add milk, stirring constantly until mixture thickens and bubbles.
- Add cheese, salt and pepper.
- Stir until cheese melts.
- Pour over potatoe mixture and stir gently to mix.
- Bake in a 350 degree oven for 35 to 40 minutes or until bubbly.

This was a fail for me. I followed the recipe, with the only difference being I used a shallot instead of onion, and sauteed it as others did with the butter. The sauce was thick in the saucepan, but after it came out of the oven it was watery and did not stick to the potatoes or ham. So it was wet chunks of ham and potato swimming in a watery puddle, and the cheese flavour didn't come through.

I've made this many times now, and I usually now "sear" the chopped ham with some chopped bacon in an ovenproof deep pan, add some kind of chopped veg like zucchini or broccoli, saute with the onion for a minute, then just layer the potatoes on top and continue as directed in the same pan. Also add a sprinkle of cheese and bake uncovered last 15 min. It's one of my favorites! I like this much better than the recipes that have you mix it all together. Nicer tastes and prettier presentation. Thank you so much!
