- Melt the butter over medium-low in a large deep pan.
- Add chopped onions and cook until the onions are soft.
- Add the flour and stir until the flour becomes frothy.
- Add the half and half and milk 1/2 a cup at a time, stirring in between.
- Add salt, pepper and cayenne pepper.
- Bring to a boil, reduce heat.
- Add ham, stir.
- Add potatoes and stir to coat.
- Pour into a buttered baking dish and put into the oven at 400F for 45 minutes, covered.
- Uncover after 45 minutes and continue baking at 400F for 20 minutes.

Awesome!!! I've been looking for a great scalloped potato recipe and this is definitely it! Didn't have all the half and half so used 2% milk and it turned out great. This is a versatile recipe that could even be made without the ham or for a change add in some chopped broccoli. Definitely one of my new favorite recipes. Thanks for posting it!

Erin, I had a question before I prepared these potatoes as to whether or not this recipe was a side dish or a main course. I decided to double the ham and used it as a main course. However, this is a delicious recipe, whether used as a main course or a side. The potatoes were perfectly seasoned and tender. The ham added just the right balance to the dish. I omitted the cheese as I decided it would present too much. Delicious, Erin! Thank you for a wonderful meal!

This was super yummy!! I tried making scalloped potatoes a few years back, but it was one of those cream of mushroom soup recipes, and it just wasn't edible. Finally decided to give scalloped potatoes a try again and boy am I happy I tried this recipe... it's fantastic!! Love the cayenne pepper kick, too. This is a winner!!

I made this to take to a potluck where they were serving ham, so I left out the ham and added extra potato to make up the volume. I also just used milk instead of half-and-half, and sprinkled a bit of cheese on top for the last 15 minutes. The potatoes were so delicious with a lovely creamy sauce, everyone went back for seconds. Thanks for the recipe Erin!
