Ham Fried Rice

- 1 tablespoon butter
- 1 2⁄3 cups water
- 1 cup long grain rice
- 3 tablespoons oil, divided
- 2 large eggs
- 4 ounces cubed ham, cooked
- 1 small chopped onion
- 1 cup frozen green pea, thawed under running water
- 1 tablespoon soy sauce
- 1 tablespoon oriental sesame oil
directions
- In med saucean bring butter and water to a boil over high heat.
- Stir in rice.
- Reduce heat to med low and partially cover the pan, simmering until most of the liquid is absorbed, about 5 minutes.
- Stir the rice with a fork.
- Reduce heat to low and cover and continue cooking until tender, about 15 minutes.
- In a large skillet heat 1 TBS oil over med high, coating the pan.
- In a small bowl beat eggs.
- Add the eggs to the skillet and fry until set, turning once.
- Transfer to plate and cut into 1/2 inch by 2 inch strips, then set aside.
- In the same skillet heat another TBS oil.
- Add ham and cook until lightly browned.
- Transfer ham to eggs and set aside.
- In same skillet, add final TBS oil.
- Add onion and stir fry for 1 minute.
- Stir in peas, cover and cook til tender 2-3 minutes.
- Gently stir in the rice, eggs, ham, soy sauce and sesame oil.
- Cook til heated through.
- Serve immediately.

Delicious! This is a great recipe...easy to modify to fit your personal taste as well as for using up leftovers. I used cold brown rice (cooked the day before in rice cooker with a bit of olive oil), and added in some leftover mushrooms [URL=http://www.recipezaar.com/36550]Sauteed Mushrooms[/URL] . To the mix, I also added frozen carrots (with the peas). I've made plenty of fried rice dishes over the years, but never with brown rice--let's just say I'm a convert now...it was delicious! Also really love the nutty flavor the oriental seasoning sesame oil imparts (I used Imperial Dragon brand). Thanks for the awesome recipe. (Even my toddler requested seconds!!)

Good way to use leftover ham. :) Since cold rice makes better fried rice, I made the rice the day before, cooking it as I normally do and without the butter. I did change the order of the cooking steps for two reasons. First, I wanted the rice a little "fried", rather than simply heated through, so I added it shortly after I added the onion to the pan. After I'd tossed it around a few minutes, I then added the rest of the ingredients, including the peas, and just heated through. I don't like green peas to be more than barely cooked, so this worked out better for my tastes. I also added quite a bit more soy sauce, but I was using a version that was relatively smooth and not overly salty. Anyway, we enjoyed this served as a simple meal with egg rolls. Thanks for posting!

<p>Before I get to the details let me tell you how I rate recipes.....and tell you how I feel about others ratings! <br /> <br />5 STARS....This recipe was excellant, we liked it very much, the directions were very clear and if I made any minor substitutions I noted it. It would most likely be made again, many times! <br /> <br />4 STARS....This recipe was good, we liked it but I made changes either in taste or it was not clear in something, but I would consider making it again. <br /> <br />3 STARS....This recipe was not something that got approval from the majority. Either it just didnt work in preparation, directions, or taste. I will tell you why and would not make it again unless I altered it much! <br /> <br />2, 1 STARS.....I DO NOT give these as I feel they are NOT worthy....especially if the recipe previously had good reviews and by my giving a low one would jeopardize the ratings. My collection numbers well over 2000 and where as some people go to bed with a good novel, my nightstand is full of cookbooks! <br /> <br />I love to bake and its nothing for me to make 15-20 different kinds of cookies and candies for the holidays. I guess that it has rubbed off on my oldest daughter who is a culinary school graduate and knee deep in pastry classes, hoping to become a pastry chef! <br /> <br />In March of 2002 I had gastric bypass, weight loss surgery and I have lost 125 pounds FOREVER, so now when I do cook it IS for everyone else to enjoy. <br /> <br />I love Zaar and all the friends I have made here, this sight is so addictive but yet so much fun! I know that in the years since Ive been a permanent fixture of this site I have acquired many great recipes and tons of cooks that I am proud to call my friends!
