- 946.36-1182.95 ml grilled squash, diced
- 236.59 ml cherry tomatoes, halved
- 340.19 g jar marinated artichoke hearts, drained and chopped
- 118.29 ml black olives, halved
- 226.79 g mozzarella cheese, diced
- 4.92 ml sweet onion, minced
- 59.14-118.29 ml roasted red pepper, diced (optional)
- 236.59 ml cooked chicken, diced (optional)
- 44.37 ml olive oil
- 29.58-44.37 ml red wine vinegar
- 4.92 ml italian seasoning
- 1.23 ml garlic powder
- salt and pepper
- chopped parsley (to garnish)
directions
- Toss all ingredients except Parsley in a large bowl.
- Chill at least 30 minutes.
- Toss again then serve, garnishing each portion with chopped, fresh parsley if desired.
- Can be served as is, on a bed of lettuce, or in a sandwich or wrap.
- Note: Grilled eggplant or green tomatoes can be substituted for some or all of the squash but the flavor may overwhelm the dish and require adjustments to the seasoning.
