Grilled Italian Sausage Veggies in Foil

- 2 Italian turkey sausage links
- 1 medium zucchini, cut into 1-inch slices
- 1 medium summer squash, cut into 1-inch slices
- 1⁄2 medium bell pepper, sliced
- 1⁄2 medium onion, cut into wedges
- 6 -10 okra pods, steam cut off, cut into 1 inch lengths (optional)
- 1⁄2 cup mushroom, quartered (optional)
- 4 -6 garlic cloves, peeled
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 2 teaspoons dried parsley flakes
- 1 teaspoon paprika
- salt and pepper
directions
- Place the sausages in a small amount of water and bring to a boil; boil for 3 to 4 minutes or until they are no longer pink; remove from water and allow to cool slightly.
- Mix together the vegetables, oil and seasonings.
- Tear 2 sheets of foil (10x10inch), divide the prepared vegetables among the foil sheets, slice the sausages into 1 inch lengths and place on top.
- Season each packet with salt and pepper to taste, bring foil up to center and fold over several times, sealing well; fold in ends and seal.
- Preheat grill, place packets on grill and cook 10 minutes, turn over and cook an additional 10 minutes.

Fabulous no fuss, no muss meal!! I did a few things differently, I forgot fresh garlic at the store so I had to use garlic powder. I also decided to cut each sausage link into 3 sections and add it into the packet uncook, that way I cut back on the olive oil and the juices from the sausage permeated everything. I also played with the veggies. I cut the squashes into strips, added some raw potato strips (to make it stodgier for the husband), chunked a red pepper, and added halved baby carrots. I double wrapped them in foil and cooked over medium coals for 30 minutes, turning three times. It was amazing!!! the onions and potatoes carmelized a bit and the juices from the sausages along with the spices was perfect!! I will be making this little gem often, I promise you.

Fantastic! We really enjoyed this meal. Be sure to season the veggies with plenty of salt and pepper - I used 1/2 tsp. of each (could have maybe used more). I left out the okra and mushrooms and used green onions instead of regular onion. Baked in the oven at 350 for 30 minutes. Served with brown rice and Parmesan cheese. So delicious and healthy, I will definitely make this again!

I used the pre-cook method on the sausage package, which is to bake at 350 degrees for 15 minutes. I just thought that sounded better than the boiling, plus there was less watching for me to do. I also did just the peppers and onions, but since I was doubling the recipe, I used the listed amounts of oil and seasonings. It was perfect. I think next time I'll throw in some red peppers for color.

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called.
Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com.
Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net.
Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
