This is the soup that is included in the Cathi Graham's Fresh Start Metabolism Program. Its a large recipe, so I will freeze serving portions and take it to work with me to thaw and heat in the mic. On this program, the fast start part, you eat this soup every day, plus other stuff they suggest for two weeks, etc. It tastes pretty good for a "diet soup". If you want a more creamy texture, you can blend 1/2 of the soup in your blender and add it back into the remaining soup. Don't spice up soup too much at first. Then when you reheat individual bowls, you can add different fresh or dried herbs, spices or hot sauces. That way you can add a different fabulous flavor to every bowl.

  1. Fry up ground turkey and set aside.
  2. Combine all other ingredients in 2 large pots.
  3. You can substitute other vegetables of your choice other than corn, dry beans or peas.
  4. Be careful not to overcook the garlic as it will turn bitter.
  5. Bring to boil.
  6. Reduce heat to med-low.
  7. Cover and simmer for 25 minutes, until potatoes are tender.
  8. Add turkey to soup mixture.
  9. Remove bay leaf before serving.
  10. Da-Licious!

This is great soup! It does make a temendous amount, so be prepared with a stockpot or 2 very large pots. I feel great when I eat it as I know I'm getting so many veggies at once. It is heart and filling and smells great, too. I did end up pureeing most of the batch (about 3/4 of it) and then blending with the chunky 1/4. It made it rich and thick. Love it.

I have made this twice now, the first time, I hated it, but my DH loved it, but I did make a mistake, so I am not rating on that attempt. (I used Broccoli rabe instead of spinach..yuk..bitter) The second time I made it, I used spinach, and my own stewed tomatoes in place of canned, for veggies, I cleaned out my garden zuccini, butternut squash, etc.. It was really good this time, and BTW DH lost 20 lbs in two weeks, on the first batch... I just tried this second batch, so I'll fill you in If I lose weight!

This is a great soup! And not just for dieters; I'd serve it to company. I found it easy to make, and it made a LOT! There was enough to freeze so I will be enjoying the fruits of my labor next week! The only change I made was putting half in a crock pot to stew all day while the other half went into the freezer. Thanks for a great recipe!
