ingredients
- 1⁄2 cup all-purpose flour
- 1⁄2 cup cornmeal
- 3 tablespoons sugar
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 egg
- 1 cup sour cream
directions
- In a bowl, combine the flour, cornmeal, sugar, baking soda and salt.
- In another bowl, beat egg and sour cream; stir into dry ingredients just until moistened.
- Fill greased muffin cups two-thirds full.
- Bake at 400° for 15-18 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before removing from pan to a wire rack.

These were delicious, quite a "Northern" style corn muffin. The best part is they aren't dry like most corn muffins -- they actually keep till the next day without crumbling. The texture is midly sweet and cakelike. I did these substitutions: I used whole grain cornmeal; 3/8 tsp. salt instead of 1/2 tsp; 1/2 cup sour cream plus 1/4 cup buttermilk instead of a whole cup of sour cream, and I used honey for the sugar. They didn't dry out like most corn muffins. It did make 8 muffins, and I will definitely make these again. Thanks, Dot!

<p>A Very Happy Stay At Home Mom!!!! I have a soon to be 11year old that lives with his dad, his name is JayJay, and 3 living at home with me, and 1 on the way....I'm lovin' life! I love being at home with my children..love paying for ALL the stuff my 2nd grader brings home...soccer fees, and basketball fees, and book orders...I love cartin' my kindergartner around, and then coming home and cuddlin' with my little girl, and shopping for her favorite thing...shoes. My husband and I are as tight as 2 people can be, and I hate it when he leaves for work and can't wait until the clock strikes 4:30 because I know that means he's on his way home. Life is good. I couldn't ask for more.</p>
