  • In a bowl, combine the flour, cornmeal, sugar, baking soda and salt.
  • In another bowl, beat egg and sour cream; stir into dry ingredients just until moistened.
  • Fill greased muffin cups two-thirds full.
  • Bake at 400° for 15-18 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pan to a wire rack.

  5. I wouldn't make these again. They tasted great, but the sour cream changed the texture a bit too much for our tastes. They became more chewy/moist as opposed to grainy/crumbly.

Tweaks

  1. These were delicious, quite a "Northern" style corn muffin. The best part is they aren't dry like most corn muffins -- they actually keep till the next day without crumbling. The texture is midly sweet and cakelike. I did these substitutions: I used whole grain cornmeal; 3/8 tsp. salt instead of 1/2 tsp; 1/2 cup sour cream plus 1/4 cup buttermilk instead of a whole cup of sour cream, and I used honey for the sugar. They didn't dry out like most corn muffins. It did make 8 muffins, and I will definitely make these again. Thanks, Dot!

My husband and I are as tight as 2 people can be, and I hate it when he leaves for work and can't wait until the clock strikes 4:30 because I know that means he's on his way home. Life is good.
