Cukes and Pasta Salad

"Great, simple pasta salad with a different taste; nice for a change of pace. I usually double or triple this recipe because it goes SOOO fast! The dressing is very tasty, not too sweet and not too sour...just plain GOOD!!"

  • Cook noodles according to pkg.
  • Drain and rinse in cold water.
  • Place in bowl, and add cucumber and onion.
  • Combine remaining ingredients in bowl and whisk together.
  • Pour over noodle mixture and toss to coat.
  • Cover and refrigerate at least one hour.
  • Mix well before serving.

  1. I made a major change: I don't like sweet pasta salad, so I used only 1 1/2 Tbsp. of sugar for a double batch of the dressing. I liked the tart taste. Very different. This was pretty good, and so easy!
     
  2. I like the taste of this salad. I thought the rest of the family would too because they love cukes & onions. But it didn't go over well with them, thats why I gave 3 stars. But I enjoyed it!
     
  3. I loved this! Very easy to make. I added extra dressing to let it marinate in overnight. Turned out delightful! I cubed the cukes and added black olives. Thanks!!
     
  4. Very nice pasta salad, although I think it needs a little more of the dressing... it's slightly on the dry side. Scaling down to 1 serving, I reduced the sugar to 1 tablespoon instead of 3, and used mustard seeds instead of prepared mustard, which I didn't have. Next time I'll chop the cucumbers instead of slicing them. Thanks for this one, I'm definitely hanging on to it!

I am a single gal, living on my own; currently working as an Occupational Therapist & living in Cumberland, MD. (It is "God's Country" out here...beautiful!) I LOVE to cook and bake, and love anything that looks, tastes, smells, or even closely resembles a veggie. I LOVE moo-cows, and therefore, cannot bring myself to eat any part of the adorable critters (i.e. NO RED MEAT!!) I love the outdoors, and pride myself on being the master griller on the fire pit.
