Cukes and Pasta Salad

ingredients
- 1 cup uncooked spiral noodles
- 1⁄2 cup peeled, thinly sliced cucumber
- 1⁄4 cup thinly sliced onion
- 6 tablespoons sugar
- 1⁄4 cup water
- 3 tablespoons vinegar
- 3⁄4 teaspoon prepared mustard
- 3⁄4 teaspoon dried parsley flakes
- 1⁄4 - 1⁄2 teaspoon black pepper
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon garlic powder
directions
- Cook noodles according to pkg.
- Drain and rinse in cold water.
- Place in bowl, and add cucumber and onion.
- Combine remaining ingredients in bowl and whisk together.
- Pour over noodle mixture and toss to coat.
- Cover and refrigerate at least one hour.
- Mix well before serving.

Very nice pasta salad, although I think it needs a little more of the dressing... it's slightly on the dry side. Scaling down to 1 serving, I reduced the sugar to 1 tablespoon instead of 3, and used mustard seeds instead of prepared mustard, which I didn't have. Next time I'll chop the cucumbers instead of slicing them. Thanks for this one, I'm definitely hanging on to it!

I am a single gal, living on my own; currently working as an Occupational Therapist & living in Cumberland, MD. (It is "God's Country" out here...beautiful!)
