Perky pork chops, delicious!! Sprinkle a little parsley on top for added color.

  1. Coat chops with flour; brown in oil.
  2. Remove and keep warm.
  3. In drippings, saute onion, green pepper, celery, and garlic.
  4. Stir in tomatoes, and spices.
  5. Return chops to pan.
  6. Bring to a boil.
  7. Reduce heat and simmer for 15 minutes.

I loved this recipe! Not only was it quick but tasty as well. I made it as directed but added more hot sauce (Cajun Sunshine) to my own. My daughter doesn't like her food spicy but we're working on that. I wish I had cooked the chops a little less but it was still terrific. I served it with rice and I think this will be the only way I cook pork chops for awhile! Thanx!!

This recipe is a winner! The sauce produced is flavorful with as much pep as you want it to have. I used Denzil's Kamakazi sauce (it is a hot one) so my dinner had lots of Zing. The only thing that I would do different is to hold back the green pepper until the last 5 minutes of cooking. I like to see the bright green color and that the peppers still have some crunch. Would be lovely served with rice Thanks MizzNezz for a delightful dinner
