  • Remove corn from cob.
  • Chop onion and pepper in food processor to the same size pieces as corn. Mix with corn and cover with 3 cups of vinegar.
  • To the remaining 1 cup of vinegar, add sugar, salt, flour and mix to a paste. Add mustard to taste.
  • Add paste to vegetable mix and bring to a slow boil for 30 minutes.
  • Can or freeze by the preservation method of your choice. My mom canned in a hot water bath.

  1. I only made a small amount, so did not bother to cook it. And I used less vinegar. It was delicious as a cross between a side dish and a relish! If I had enough corn, I would go ahead and can a batch!!
