- 12 ears sweet corn
- 3 bell peppers, cored and seeded
- 4 onions
- 1 1⁄2 cups sugar
- 2 tablespoons salt
- 2 teaspoons flour
- 4 cups vinegar
- prepared mustard
directions
- Remove corn from cob.
- Chop onion and pepper in food processor to the same size pieces as corn. Mix with corn and cover with 3 cups of vinegar.
- To the remaining 1 cup of vinegar, add sugar, salt, flour and mix to a paste. Add mustard to taste.
- Add paste to vegetable mix and bring to a slow boil for 30 minutes.
- Can or freeze by the preservation method of your choice. My mom canned in a hot water bath.
