Chewy Chocolate-Coconut Bars

  • Set oven to 350 degrees.
  • Grease a 13 x9-inch baking pan.
  • In a large bowl cream shortening, brown sugar, eggs and vanilla until well blended.
  • In a small bowl mix together flour, baking powder and salt; add to the creamed mixture, mix until blended.
  • Mix in the coconut & chocolate chips.
  • Transfer/spread the mixture in the prepared pan.
  • Bake 20-25 minutes.
  • Let cool before slicing.
  • Delicious!

  1. These are pretty darn good! Nor a huge fan of coconut in baked goods normally but I had some leftover from a birthday cake I made for my mother. These taste like almond joy in cookie form. They needed to bake a little longer because they were still "wet" in the middle. I did have some trouble getting them out of the pan, but only a little. Tasty morsels!
     
  2. These bars are excellent! I agree that the bars need to bake for an additional 5 minutes over the suggested baking time. I can't wait to make them again.
     
  3. Really good chocolate chip cookie bar, but mine had to bake for 30-35 minutes. They were still doughy in the middle at 25 minutes. Great served warm with a scoop of vanilla ice cream.
     
  4. Yum! These are indeed addicting! They're not an overly sweet bar, but the coconut and chocolate make them easy to just keep going back for more! :) I did add about a half cup of chopped walnuts as well and used a 71/2 X 11" pan to get a thicker bar (personal choice) and the baking time was right on at 25 minutes. Thanks for sharing another keeper kitten! :)
     
  5. A perfect bar recipe again from Kit! :) These are so tasty and moist. Mine baked up in 30 minutes. LOVE the coconut addition to these bars. They were a big hit at a high school gathering at my house! Poof - they were gone! Glad I tagged you in 123 Hits. :)
