Bow Ties With Bacon

- 6 slices bacon, diced
- 1 medium onion, finely chopped
- 2 (14 ounce) cans diced tomatoes
- 1 lb bow tie pasta
- 1⁄4 cup heavy cream
- 1 tablespoon dried parsley
- 1 1⁄2 teaspoons sugar
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
directions
- In a 12" skillet over medium heat, cook bacon until browned. Remove bacon to paper towels to drain. Drain all but 2 tablespoons of the bacon fat and cook until tender.
- Add tomatoes and liquid, sugar, salt, & pepper. Over high heat, bring to a boil. Reduce heat to low; cover and simmer for 15 minutes to blend flavors.
- Meanwhile, cook bowtie pasta according to package directions; drain. Stir cream and parsley into tomato mixture; heat through (do not boil or mixture may curdle).
- To serve, spoon sauce over pasta, sprinkle with bacon and toss.

I absolutely loved this! Even though I forgot the onions! I added 2 cloves of garlic and left out the sugar because I like things spicey, and the salt because I'm watching my sodium. I used lower sodium bacon and tossed with the sauce and pasta. Maybe my canned tomatoes had more water in them - I will drain them next time, not cover when simmering, and hope for a little thicker sauce. We're bacon lovers so I will probably double it next time. Thank you so much for sharing this! I had never thought about bacon in a tomato sauce. Yummy!!!!!!!

My DH gave this a five star, but I am giving it a four just because I thought it could use a little extra zing. I followed the instructions exactly, it came together very well, as I was to pour in the cream I was wondering how this was going to taste and if would come together, but the heat was not at a boil and it mixed well to create a very nice sauce. I thought it could use just a little something extra to give it a bit of a zing perhaps next time I will use seasoning salt or a few red pepper flakes, however as I said DH loved it and it will be a regular in our house especially on those busy nights. Both places are beautiful in their own way, although Arizona is where I learned that the little marshmallows in the Lucky Charms box are actually supposed to be crisp and crunchy, not gummy and all stuck together. What a revelation!
