  • Preheat oven to 350°F.
  • Saute onion and mushrooms in butter.
  • Add broth and cook for 5 minutes.
  • Put rice in a 1 1/2 quart casserole dish.
  • Pour broth mixture over rice.
  • Cover and bake 45-60 minutes.

  3. Very nice side dish. Easy to prepare too. I slowly cooked the onions to caramelize them before adding fresh mushrooms to the saute. Then I added a smidgen of thyme with the broth. My hubby really like this dish and asked me to save some to take in his lunch today. Thanks for sharing.
     
  4. Very simple rice dish. I used fresh mushrooms and a refrigerated beef base, diluted with water, for the liquid. Perfect serving size for 2 people. baked for 50 min. :)
     
  5. This was really good and easy to make. My boys ate it up. I followed the recipe exactly as written other then I didn't use butter to saute the mushrooms and I used minced onions. Great side dish.

Tweaks

  1. I used a medium onion, a package (I think it's 250 g) of fresh mushrooms. One (10 ounce) can beef broth and 5 ounces of water plus beef stock. I didn't have long grain rice so I used basmati rice. Instead of butter, I used canola oil. It's really delicious. Thanks Engrossed :)
