- 85.04 g raw ground bacon
- 141.74 g onions, small dice
- 283.49 g carrots, small dice
- 56.69 g celery, small dice
- 56.69 g white vinegar
- 5 beef stock
- 5 chicken stock
- 283.49 g dried lentils
- 4.92 ml Worcestershire sauce
- 1 oregano
- 1 bay leaf
- 2.46 ml fennel seed
- 283.49 g hot dogs, thinly sliced
- salt
- white pepper
directions
- Add bacon to heavy stock pot and render down untill fat is released add fennel to pot.
- Heat through carrots, celery, onions.
- Cook untill onions are transparent then add vinegar.
- Add both stocks and bring to a simmer.
- Add lentils and seasonings (worcestershire sauce,oregano and bayleaf),then simmer for 1 1/2 hours.
- Add hotdogs and cook til they are heated through.
- Season to taste.
