Banana Barley Bread

  • Preheat oven to 350F, or 325F for convection oven.
  • Combine flours, baking powder, baking soda, and salt in large bowl. Whisk together.
  • Cream together vegetable oil, sugar, eggs and bananas. Add wet mixture to dry ingredients, stir to combine.
  • Spray an 8X4" loaf pan with non-stick spray. Pour batter into pan.
  • Bake for 45-55 minutes until a toothpick poked in the center comes out clean.
  • This recipe can also be made as 12 muffins - bake for about 20 minutes.

  1. P. S. Since I don't have any Barley Flour, would it be ok to use my Barley Flakes that I could blend into a flour?
     
  2. I wonder if it would be alright to use 1/3 Splenda and 1/3 Stevia? Any other sugar substitutes? My husband is diabetic.

  1. Very easy and quick. I like the higher percentage of barley flour as compared with some other recipes. I may try variations now that the first batch was so good. Substitute Sorghum or honey for the sugar? I've been grinding wheat and corn for some time. I'm just now trying barley. Fun in the kitchen! Thanks

I am a stay-at-home-mom, or rather, drive-around-in-the-minivan mom to DS7, DD6, DD5 and DS1. DH is lactose intolerant so I have learned to work around that in my recipes. I started baking cookies and such when I was about 9, and cooking daily suppers when I was 13 so I have been in the kitchen for a good percentage of my life already. It's a good thing that it's my favourite place to be! My favourite appliance is a rice cooker, with the Kitchenaid mixer running a close second. DH bought a Traeger wood pellet barbecue for Mother's Day a few years ago and it is amazing. I almost always wear an apron in the kitchen because I'm a sloppy cook and stained too many shirts.
