  • Sauté oil, garlic and onions in large pan or Dutch oven until soft.
  • Add ingredients 4 through 13. Bring to low boil, then reduce heat and simmer 20 minutes.
  • Cut tortillas into 1/4-inch strips and fry in oil or spray with oil and bake at 400ºF (while soup is cooking). Sprinkle with salt if desired.
  • Thoroughly mix flour and water, then whisk into soup. Bring to a low boil, then simmer 5 minutes.
  • Add chicken and simmer 5 minutes.
  • Stir in sour cream and cheese (more or less of each, depending on taste). Ensure 165ºF serving temperature.
  • After serving soup, pile tortilla strips into a "haystack" shape on top of the soup.
  • Optional: garnish with freshly chopped cilantro.

  1. Loved it, wish I would have added corn and zucchini. I did omit the sugar (hubby doesn't like sweet foods) will make again!
     
  2. Good tasting soup, but VERY different than Applebee's Chicken Tortilla Soup.....color not the same. Applebee's has corn, carrots, red bell pepper and other veggies this does not have. Not even close to their soup.

  4. i got this recipe on line and my aunt made it for her church for soup night.even though i'am not a soup person but it was a very good soup try it you will be impressed delicious
     
  5. My mother declares this heavenly. I thought it was very unique, but there was too much onion in it for me. It was probably the size of my onions; next time I'll use smaller ones. Thanks for the recipe, I'll definitely be using it again. :)

  1. This recipe is awesome!!I made it for me and a friend and we both loved it!! She raved about it for weeks and begs me to make it all the time. I didnt use jalapeno's in it because i dont like spicy but I did add more hot sauce for a little bit of a zing. I also used about 12oz of velveeta cheese for a heartier version and instead of corn tortillas I used flour because they baked better....overall this is very very YUMMY!
     
  2. Great! I added a 1/2 cup corn, and substituted Monterey Jack for the processed cheese. I baked the tortillas in the oven. This was wonderful.

I am happily married to my best friend and we just bought our first house! No kids but we have 2 little dogs that we think the world of.
