- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 3⁄4 teaspoon salt
- 1 1⁄2 cups vegetable oil
- 2 cups sugar
- 3 eggs
- 3 golden delicious apples
- 1 cup coarsely chopped walnuts
- 3 tablespoons apple brandy
- 16 ounces cream cheese
- 1⁄2 cup butter
- 1 cup cold caramel
directions
- Preheat oven to 325.
- Grease and flour two 9 X 2" round cake pans and line the bottom with waxed or parchment paper.
- Sift together flours, cinnamon, baking soda, salt.
- On medium speed, beat oil with sugar for 3 minutes or until smooth. Add eggs (room temperature) one at a time and beat until light, 1 or 2 minutes. Add the dry ingredients in thirds, beating after each addition until smooth.
- Expect a thick and doughlike batter.
- With a spoon, stir in the apples (cut in 1 inch pieces), walnuts, and brandy until just barely blended.
- Bake for 44-55 minutes or until a cake tester comes out clean. Let rest in pans for 10 minutes then remove and cool completely.
- On medium speed beat cream cheese and butter until smooth, for about 3 minutes. Gradually add caramel until it is well incorporated.
