Apple Pudding With Vanilla Sauce

"This is an old time recipe and was in my aunt's cookbook from her Church. Kathryn Esham submitted the recipe. There isn't anything like it here on RecipeZaar. My husband enjoys this. I think the sauce is almost like my grandmother's that I so loved. I hope you will try this one."

  • Pudding::.
  • Sift the flour, salt, baking soda, and baking powder together; set aside.
  • Cream butter with lemon rind, vanilla and sugar.
  • Beat in egg. Stir in flour mixture.
  • Add apples. Mix just until lblended together. Turn into a greased 8 x 8 x 2-inch pan.
  • Bake in preheated 350 degree oven for 45 minutes.
  • Vanilla Sauce:.
  • In a small saucepan, combine sugar with cornstarch and salt. Gradually stir in the water and mix well.
  • Over medium heat, cook and stir until it reaches medium thickness.
  • remove from heat. Stir in butter, lemon rind and vanilla.
  • Serve warm over the apple pudding.

  1. Photo shows ouddibg baked in custard cup, but recipe calls for 8x8 pan. Are there directions for making individual cups? Thanks.

  1. 10 stars! The BEST non-chocolate dessert we've had in a very long time. The lemon and apple flavors don't compete, but marry perfectly in this dish. I scaled it down to serve 2 and baked it in two 5 oz ramekins. The scaled down ingredient amounts were very tedious and I think I may have accidentally used 1/3 TBL of vanilla instead of 1/3 tsp. in the batter. To measure a 1/3 of an egg I beat one egg lightly in a small glass measuring cup and then used one third of the measured egg. :) The batter looked like cookie dough but I went with it & divided it into the ramekins. I baked them for 25 minutes (checking first at 20) and the final result was amazing! The texture was like cake but the flavor was like a cookie. The sauce was just the icing on the cake. I'll be using that on pound cake & maybe even cheesecake now too! I was so lucky to adopt you, Debaylady! Thank you for sharing this recipe, as we'll be making it again & again! Made & enjoyed for Spring 2010 PAC-O.

I just love reading recipes, dreaming how they will actually taste, and selecting those special recipes that prompt me to prepare them. The best part, though, is the thrill of cooking, relishing the delicious smells, and then comes the big event - tasting, eating, sharing, and making memories for loved ones! It gives me great pleasure to know that when I have family meals I am carrying on a tradition of all the women before me in our families. My mother,MIL, and grandmothers were excellent cooks. I have been blessed to have had the benefit of knowing other many wonderful friends and family members who prepared some pretty amazing meals in their kitchens. Did they share those recipes? Yes, they did! Well, maybe not all of them. If you had someone in your life who was a kitchen mentor, you will be able to retrieve your marvelous memories too! Because you love cooking as much as I do, in time I will be sharing recipes with you! I have so many cookbooks, but a favorite of mine is one I purchased in Ocean City, MD at the old Life Saving Station. It has several family members older recipes. My great grandmother's Oyster Stew is so dear to me as I didn't have any of her recipes. I have shared it as I have never come across any other like it. We really look forward to her oyster stew! About rating recipes...I will never write a negative rating because all of us can have an off day; it's just like dining out at a favorite restaurant. Once in awhile my most favorite dish is not up to par but that doesn't mean I won't order it again. Let's just say I feel each individual rating is subjective. Actually I'm more interested in the comments given to all recipes I make, including my own recipes. Recipe Zaar has allowed me to savor the regional foods all across our beloved United States of America and even beyond! I have even gained some special friends here. Thank you Recipe Zaar!
