This is a simple low sugar version of a crustless apple crumble. Changing the type of apples will also allow for different flavors and textures. I have used Golden Delicious apples mixed with Empire apples and have been very pleased.

  1. Toss the sliced apples in the lemon juice as your are cutting them.
  2. Combine the barley flour and cinnamon with the apple mixture.
  3. Place in a 9 inch pie plate and dot the top with butter.
  4. Combine the flax seeds, wheat germ, oats, almonds, flour, sugar, and cinnamon in a bowl and stir together.

Due to dietary restrictions, I substituted tapioca flour for barley flour, oat bran for wheat germ, and left out the lemon juice I also added some fresh mulberries. The topping was crunchy and delicious!
