Homestyle Chicken Noodle Soup

"This is a variation of a recipe I found on here. So yummy. True Comfort food. I have also made this using homemade noodles and it turns out fantastic. Also, if you have left overs, refrigerate them and the next day the broth thickens to a sort of gravy making it even better imo."

  • 96 ounces chicken broth
  • 4 carrots, chopped
  • 4 stalks celery, chopped
  • 2 -3 tablespoons minced garlic
  • 1 bay leaf
  • 2 (16 ounce) bags frozen noodles (I use Reames from the freezer section if I don't make my own)
  • 14 teaspoon onion powder
  • 14 teaspoon thyme
  • 14 teaspoon black pepper (use less if you want)
  • 14 teaspoon all purpose seasoning
  • 14 teaspoon seasoning salt (aka Season All)
  • 2 sprigs fresh parsley, chopped
  • 3 whole chicken breasts, bone and skin removed, cooked and chopped

  • To cook the chicken breast, wrap each breast tightly in foil and bake on cookie sheet until no longer pink. No water or seasonings needed, the foil keeps the chicken's natural juices "trapped" so it cooks moist and tender. Chop into pieces of whatever size you desire.
  • In large stockpot, add broth and start cooking on high heat. Chop veggies to whatever size of pieces you desire. I keep mine on the larger size. Add to broth.
  • Add all seasonings to broth, including bay leaf, cover and bring to a rolling boil.
  • When boiling, add noodles and chicken to broth, lower heat to med and bring back to a boil, uncovered.
  • Boil for approx 25 min or until noodles are al dente.
  • Lower heat to get a good simmer. Simmer 15-20 min uncovered. Give a good stir, remove bay leaf and serve.
  • Optional Additions:.
  • 1/4 tsp celery seed.
  • omit onion powder and instead add 1/4c chopped onion.
  • Note: If you don't have fresh parsley you can use 1T dried parsley instead.
  • Prep time is an estimate and does not include cooking time for the chicken breasts.

  3. The weather has turned cool at night so wanted some soup for dinner. I made as directed other then I couldn't find frozen noodles so used dry egg noodles. I had cooked chicken in the freezer so I used that instead of cooking more. We all enjoyed this. Made for Spring PAC 2010.
     
  4. When I told my son we were having chicken noodle soup for lunch he grumbled something about not liking chicken noodle soup. He sat down to eat anyway. After filling his large bowl a third time he grumbled something about this being better than chicken noodle soup. I guess that's an endorsement for a 5-star rating! I found this recipe quick and easy to make, prepared as directed and will try again, perhaps trying some of the additional options listed in steps 8 & 9. Made for PAC-O, Fall 2009
     
  5. Made this for PAC 2009. This was good soup and quick to make. MY DS g'f was over and felt icky so I made this for her and she enjoyed it. I did reduce for 2 so used 1 chicken breast 3/4 bag noodles, 32 oz. of broth(homemade) but kept the veggie sthe same. It came out more chunkier than a regular soup by choice so she could get some veggies into her body. I liked the idea of cooking the chiken breasts they way described, no fat or oil needed. Very good and it came out super moist. Took 30 min. in toaster oven. Thank you for the recipe. Will use this again.
