  • By the time it takes to read this, you can be done already! Why wait in a drive through? Need to eat healthy? Use a whole grain muffin! Feel like you must eat in your car? Okay wrap it in a paper towel and drive.
  • Here's how to make:.
  • Use a 2 cup glass pyrex measuring cup (makes the perfect size)!
  • Break your egg into the pyrex and stir it up to break the yolk.
  • Top with deli ham.
  • Cook in microwave for 30 seconds on high.
  • Top with shredded cheese and cook for 15-20 seconds longer to melt cheese.
  • With a butterknife loosen the cooked egg and guide it onto your muffin and place the top on it.
  • Go ahead eat it!

  1. I make these all the time for the guys in my office. They love them. Last week I tried a new idea and spread a little jalapeno jelly on the toasted muffin before adding the eggs, cheese and ham. Now they want them fixed that way all the time!

I love egg sanwiches and I had been making them before work quite often but getting out the frying pan and making a mess to clean up in the kitchen at 6am was wearing thin so I haven't made on in a while. That changed this morning with this super easy breakfast! I am thrilled to have found this recipe and know that it will be used very often in my house. The only thing differently (I am going to try next time is to spray the measuring cup first. Maybe that way the egg will just slide right out.
     
  3. Easy and fast, sometimes skip cheese or use a part of Laughing cow lite wedge, Adding a low fat hummus good on these too. A favorite breakfast. I use a Pyrex large mug with handle. Works great.
     
  4. I have small square corning "bowls". They are the perfect size for these eggs on toasted sandwich bread.

Tweaks

  1. So quick and easy! I used about 2 teaspoons of Hormel's Real Bacon Crumbles instead of the ham, since I usually have a package in the freezer.
     
  2. I do this a lot for my family. The ham can be switched w/ Canadian bacon, cooked bacon, or vegetarian sausage for my vegetarian daughter (it is really good and low fat!). I will sometimes make in the evening and she will reheat in the morning for a quick breakfast before school.
     
  3. This is absolutely ingenious! I had to cook my egg for a little over 1 minute but it turned out light and fluffy, just like the real thing. I let the hot toasted muffin melt the cheese instead of cooking it with the egg and ham, but otherwise didn't stray from the recipe. Thanks for a great idea!
