- 6 eggs
- 1⁄3 cup milk
- 6 teaspoons parmesan cheese
- 16 shiitake mushrooms
- 1 tablespoon olive oil
- salt, pepper
- scallion, chives (optional)

- .Wisk eggs with milk; sauté mushrooms in olive oil. Spoon mushroom to muffin tins and add egg mixture to 3/4 full. Bake 15 min at 400°F.
