Pizzelle Dessert Cups

"Pizzelles (pronounced Pitt-SELLS) are Italian cookies that are baked in an electric appliance that looks something like a waffle iron. Normally they are left in a flat shape, but with this recipe, you shape the hot cookies over a small-bottomed glass to create a cup shape. These crisp dessert cups are the perfect holder for a scoop of chocolate mousse or a fruit granita. This is a spectacular finish for any meal, but especially for an Italian meal!"

  • Plug in pizzelle iron and allow it to heat while you are making the batter.
  • Batter: Whisk all ingredients together until smooth.
  • Drop a tablespoon of the batter onto the hot iron (sprayed with non-stick spray). Allow to cook 1 minute.
  • Remove hot cookie from iron and press it over a small-bottomed glass in order to create a cup shape.
  • Allow cups to cool thoroughly; store in an airtight container to maintain crispness.
  • Use these cups to hold chocolate mousse, pudding, ice cream, or a fruit granita.

  1. This was my first time trying this type of cookie. I followed the recipe except that I didn't have lemon extract so I subbed lemon juice. I also added the zest. The cookies were thin and not super lemon flavor. I added more flour and more lemon juice. They became thicker and tasted better. I will try these again with lemon extract.
     
  2. Oh I love this recipe! The lemon zest puts this over the top. Instead of the lemon extract I used fresh lemon juice. I set the machine on 3 which is medium and I think that I would cook them a little longer that one minute each I had to work fast to form three of them at a time, which is what my machine does. But after a few times I only cooked two at a time a little easier to shape. I filled them with recipe#61829 which worked nicely together. I suggest not to fill them ahead of time because they may go a bit soggy. Thanks for sharing this recipe, One I will be making again. Made for the Taste of Yellow in the cooking photo forum.
     
  3. Delicious! I've made pizzelle for many years, but always with anise flavoring. The refreshing lemon flavor here does pair excellently with granita, sorbet or sherbet, just as you suggested. On a side note, pizzelle is actually pronounced peetSELLay in standard Italian. Some Italian dialects (usually southern) drop the final vowel and pronounce it PEETzell. Pizzelle is already in the plural form, so the s is unnecessary. At any rate, thanks for getting me to think outside the box and form the cookies into bowls!
