Leftover Veggie Chicken Stir-Fry

ingredients
- 4 cups vegetables, cut in 1 in. cubes. (Veggies can be fresh or whatever is leftover in the fridge. Combination ideas peas, broccoli, corn,)

Sauce
- 1⁄3 cup canned chicken stock, defatted
- 1 tablespoon soy sauce
- 1 tablespoon teriyaki sauce
- 1 teaspoon cornstarch
- 2 teaspoons fresh grated gingerroot

Chicken
- 3 boneless skinless chicken breasts, cut into 1 inch cubes
- 3 garlic cloves
- 1⁄4 cup chicken broth (To coat wok or pan)
- rice or pasta
directions
- Sauté chicken and garlic. Set aside.
- Coat a wok or frying pan with oil and heat.
- Add 1/4 Cup chicken broth and the 4 cups of veggies.
- Stir-fry 2-3 minutes stirring constantly.
- Add the chicken and the sauce ingredients and cook 3-5 minutes stirring until the liquid thickens.
- Serve over brown rice or pasta.

We loved the ginger and garlic flavours in this stir-fry, and I loved how easy it was too. I used a combination of leftover and frozen vegetables plus a sliced onion, and used ground turkey instead of chicken breast. I also added a little hoisin sauce and sweet chili sauce to the mix as my kids like a bit of sweet in their stir-fry. Delicious and extremely versatile. Thank you for a keeper!

mmm awesome is right! Delicious and so versatile!! I used a mix of frozen and fresh veggies. Frozen spinach, frozen sweet potato, and fresh cauliflower, mushrooms, and red onion. It is the teriyaki and soy sauces that make the dish, wonderful flavour and of course the garlic!! I used home made turkey stock which also added a nice bit of flavour. I will be making this one anytime I need to use up some veggies!! thanks for posting.

People love my pizza Swirls. I love all foods. I love to try complicated recipes for fun and I make alot of my own breads. My kids love to help me cook I think its a great time to get to communicate with our kids especially when life can get so crazy with school and such, this is a great habit we have gotten into, cooking and chatting LOL.
We now have a smoothie night where we make an assortment of smoothies as a dessert, and on occasion we have had smoothies for dinner but that is a rare occasion. Its kids choice and they have fun on recipezaar because I have dedicated a cookbook just to smoothies. My daughter is getting creative in her smoothie endeavors and coming up with some incredible ideas!
In Jan 09 I was diagnosed with Breast Cancer and have just began the treatments
to get myself back up to speed.
*UPDATE* November 2009
I have finished my radiation and chemotherapy and am on the mend. Chemo
caused nerve damage in my leg so I am unable to walk without a cane and a brace but otherwise doing great!!!!!!!!

In september of 2009, The Pink ribbon tour came through Wickenburg. The pink ribbon tour are 2 Pink Fire Trucks with the firefighters wearing pink. I had the honor
of being one of the people that got to sign my name on the firetrucks as it was beginning a long tour of the United States.
