Vegetable Fish Chowder

- 1 tablespoon butter
- 1 onion, chopped
- 1 carrot, chopped
- 2 potatoes, peeled and cubed
- 2 garlic cloves, minced
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 3 tablespoons all-purpose flour
- 4 cups chicken stock
- 1 cup milk
- 1 cup frozen corn kernels
- 400 g haddock fillets, cubed (You may use whatever type of white fish you like)
- 2 tablespoons fresh parsley, minced
directions
- In a large saucepan, melt the butter over medium heat.
- Fry the onion, carrot, potatoes, garlic, salt and pepper, stirring occasionally, until the onion is softened, about 5 minutes.
- Sprinkle with the flour and cook, stirring, for 1 minute.
- Add the chicken stock and bring to a boil.
- Reduce the heat, cover, and simmer until the potatoes are tender, about 10 minutes.
- Add the milk, corn and fish.
- Heat until steaming and the fish flakes easily when tested, about 5 minutes.
- Add the parsley.

This was a hit with my guests tonight. I doubled the carrots, garlic and parsley as I like a soup with lots of stuff in it. I also did not use any salt in the soup or in the chicken stock I made. That's why I doubled the garlic and parsley. Also, instead of using frozen corn, I used a can of no-salt added corn. It sure was quick to make once all the chopping was done.

This is really good and easy-to-make soup and is also very open to adaptations! This is also a great emergency dinner recipe -- you know those nights when you can't figure what to have -- well most everything I have on hand or can be subbed in very easily! The changes I made was using 1 leek (which needed to be used soon) instead of the onion, 4 baby potatoes instead of regular potatoes and vegetable broth instead of chicken broth. I also mixed shrimp and fish together to equal the amount of fish indicated -- very good and filling! Thanks for sharing this keeper which we will be having often!

An easy way for the whole family to enjoy fish. Delicious. I added a dollop of Patak's Curry Paste, some canned mushroom bits & frozen yellow beans. I imagine you can tweak this recipe to any flavour favourites. I'm not much of a cook, so I was thrilled when my family asked to have this a few times a week!
