ingredients
- 1 green bell pepper, chopped
- 1 medium yellow onion, chopped
- 1 medium eggplant, peeled and chopped
- 2 garlic cloves, minced
- 3 tablespoons olive oil
- 1 (24 ounce) can sliced tomatoes with juice
- 1 (15 ounce) can corn kernels, drained
- 1 tablespoon hot creole seasoning, of choice
- salt & freshly ground black pepper
directions
- Heat oil and saute' first four vegetables until soft. Add remaining ingredients and simmer until some of the juices have reduced. Let cool a bit; taste and adjust seasonings.
