Sneaky Momma's Tomato Sauce

- 1 tablespoon extra virgin olive oil
- 1⁄2 cup onion, chopped
- 1⁄2 cup red bell pepper, chopped
- 2 garlic cloves, minced
- 2 (28 ounce) cans tomatoes, drained
- 1 (6 ounce) can tomato paste
- 1 cup basil leaves, shredded
- 2 cups kale, shredded
- 1 large carrot
- 2 tablespoons parsley, minced
- 1 teaspoon dried oregano
- 1⁄2 teaspoon dried thyme
- 1 pinch red pepper flakes
- 1⁄2 teaspoon sugar
- 1⁄2 teaspoon black pepper
- 3⁄4 teaspoon salt
directions
- Heat oil over medium and saute onion and red pepper until soft, about 5 minutes. Add garlic and saute about 1 more minute.
- Add tomatoes, tomato paste, basil, kale, carrot, parsley, oregano, thyme, and red pepper flakes.
- Bring to a boil, then reduce to low and simmer for one hour.
- Allow to cool slightly, then transfer to blender and blend until smooth.
- Add sugar, salt, pepper and reheat if necessary before serving. Freezes well.
