ingredients
- 1 lb ground beef
- 1 onion
- 3 potatoes
- 3 carrots
- 3 celery ribs
- 3 garlic cloves
- 1 cup cooked rice
- 14 1⁄2 ounces stewed tomatoes
- 14 1⁄2 ounces corn
- 14 1⁄2 ounces peas
- 14 1⁄2 ounces green beans
- 1 bay leaf
- 1⁄2 teaspoon thyme
- 1⁄2 teaspoon basil
- 3 teaspoons salt
- 1⁄2 teaspoon black pepper
- 8 cups water
directions
- Brown ground beef and onion in frying pan.
- Add all ingredients, including ground beef & onions, to a large pot.
- Bring to a boil.
- Reduce heat to medium.
- Let cook until vegetables are cooked through.

This is a very good soup. We did find it a bit bland so I added a couple splashes of Lea & Perin, 2 tsp parsley, a few sprinkles of old bay seasoning, and a tsp of pizza seasoning. I did make it using ground beef. I also used all beef broth instead of water to give it a richer flavor. It almost tastes like shepards pie in a soup!! I will make this again.
