Pregnant Soup

"One of my administrators cooked this for a meeting and I loved it. The beef was omitted for a completely vegan soup. However, I'm sure it would be delicious with the beef as well--or maybe turkey. She said the soup was given to her while she was pregnant. This is souper (he he) easy to make. It also makes a lot of soup, but it freezes well."

  • Brown ground beef and onion in frying pan.
  • Add all ingredients, including ground beef & onions, to a large pot.
  • Bring to a boil.
  • Reduce heat to medium.
  • Let cook until vegetables are cooked through.

  1. This is a very good soup. We did find it a bit bland so I added a couple splashes of Lea & Perin, 2 tsp parsley, a few sprinkles of old bay seasoning, and a tsp of pizza seasoning. I did make it using ground beef. I also used all beef broth instead of water to give it a richer flavor. It almost tastes like shepards pie in a soup!! I will make this again.
