O'Brien Quiche

- 1 1⁄2 cups o'brien frozen potatoes
- 1⁄2 cup shredded colby-monterey jack cheese or 1/2 cup shredded cheddar cheese
- 1 cup diced broccoli floret
- 3 large eggs
- 1 tablespoon water
- salt and pepper
directions
- Preheat oven to 400 degrees.
- Place frozen potatoes in microwave and cook on High for 30 seconds.
- Spread potatoes evenly in 9-inch glass pie plate that has been sprayed with nonstick cooking spray.
- Sprinkle potatoes with salt and pepper to taste.
- Spread cheese evenly over potatoes.
- Spread broccoli evenly over cheese.
- Beat eggs well with water.
- Pour carefully over broccoli.
- Bake for 30-35 minutes, or until center is set and top is golden brown.
- Serves 4.
- NOTE: This recipe tested at high altitude (over 3,500 feet).
- Your cooking time may be shorter.

This recipe was a real "find." It couldn't be any easier to make! I microwaved broccoli, then chopped it. I added a small bit (one piece) of ready cooked bacon. I used a mix of cheddar, provolone, and mozz. cheese. I liked the creaminess the provolone gave it! My mixture looked pretty full in the pan, so I took a previous reviewer's suggestion and used an extra egg (4). This cooked very evenly and tasted great. The small bits of bacon went nicely with the broccoli and the potatoes are nice and tender in the eggs. This reminded me of a "Bisquick Impossible Pie," but this is an equally good alternative for when I'm out of Bisquick. I can see this recipe coming in handy often! Note: I served with a cantalope, grape, and canned peach fruit salad and a broccoli slaw with balsamic dressing and sunflower seeds. Thanks Elizabeth, for posting. Roxygirl

This was a very good quiche, but kind of boring. I used tater tots for the crust, as that's all I had in the freezer. Turned out surprisingly well! Next time I use this recipe, I will add either bacon or ham, and use Swiss to give it a more distinct flavor. I also added mushrooms. Easy base recipe to add to!
